Submitted by Rebekah
Ingredients:
3 cups all-purpose flour
1 cup sugar
3 tablespoons poppy seeds
1 tablespoon baking powder
2 teaspoons grated lemon rind
1 teaspoon salt
10 tablespoons butter
1 large egg
2 tablespoons fresh lemon juice
1/3 cup whole milk
1 tablespoon sugar
Position rack in top third top of oven and preheat to 375 degrees. In a large mixing bowl, combine flour, 1 cup sugar, poppy seeds, baking powder, grated lemon rind, and salt. Cut in butter with a pastry cutter until mixture resembles coarse crumbs. In a separate bowl, whisk together the egg and the lemon juice. Add egg mixture to flour mixture and cut in with a fork until moist clumps form. Add the milk in the same fashion. Using floured hands, gather the dough into ball (be careful not to over-handle dough, otherwise it may become tough) Place the ball of dough on a large baking sheet and flatten into an 8-inch round. Cut the round into eight wedges and brush with milk. Sprinkle with one tablespoon of sugar and bake until scones are golden brown, about 25 minutes. Transfer to a wire rack and cool. These scones can be enjoyed with a cup of tea!
